This is also why so-called “dry canning,” heating jars in the oven to try to sterilize dry goods, is not a substitute for proper drying and packaging. The National Center for Home Food Preservation does not recommend dry canning for exactly this reason: it does not reliably remove oxygen or guarantee the food was dry enough to begin with.

- Confirm your food is fully dry and at room temperature before bagging it

- Check the bag after 24 to 48 hours; it should look vacuum-tight and slightly concave, not puffy
If the bag is still puffy after two days, the absorber did not do its job or the seal leaked somewhere along the line. Cut it open, replace the absorber, and reseal it rather than gambling a decade of storage on a bad seal.
Buckets, Labeling, and Storage Conditions
A sealed mylar bag is a barrier against oxygen and light, not against rodents, drops, or a forklift. Most long-term setups nest the mylar bag inside a food-grade five-gallon bucket with a gasketed lid for physical protection.
Gamma-seal lids, which use a screw-on ring instead of a snap-fit lid, make it far easier to reopen a bucket repeatedly without wrecking the seal. They cost more than a standard lid, but they pay for themselves the first time you need partial access to a bucket you plan to keep sealed.
Store sealed buckets off the floor in a cool, dark, dry location, ideally under 70 degrees Fahrenheit. Every 10-degree increase above that roughly cuts your effective shelf life in half, so a hot garage will waste the work you just put into packing the bag correctly.
Label every bag with the contents and the packing date before it goes in the bucket, not after. Once bags are stacked, the label on top is the only one you will see again for years.
Protecting Your Mylar Stockpile From Pests
Mylar blocks oxygen and light, but rodents can and do chew through it, and any food that was already carrying insect eggs when it went into the bag will still hatch inside a sealed environment. The bag does not kill what is already there; it just seals it in.
